Blood Orange Bacon Grilled Cheese

Ingredients
  • 2-3Tbsp Pickle Creek Blood Orange Thyme Infused Olive Oil
  • 4slices breadSourdough or French
  • 8slices Gouda cheesepreferably smoked
  • 2slices bacon(I prefer oven roasted)
Instructions
  1. I like to use oven-roasted bacon for this sandwich because it stays flatter, which is nice for layering into sandwiches. And it’s easy to make: Lay desired number of slices of bacon out flat on a baking sheet. Optional: Sprinkle with cracked black pepper. Bake in a 400 F oven for 20 minutes, until well-browned and crispy. Use tongs to move slices of cooked bacon onto a plate lined with a paper towel.
  2. To start the grilled cheese sandwich, heat a large skillet over medium heat. Add about 1 Tbsp olive oil to the pan, coating the bottom of the skillet.
  3. Lay 2 slices of the bread in the skillet. Place 2 slices of Gouda cheese on top of each slice of bread. Add a layer of bacon, and top each sandwich with a second slice of bread.
  4. Cook over the medium heat for 3 to 4 min or until the bottom slice of bread is golden brown and the cheese has begun to melt. Add a little more olive oil to the pan, and then flip the sandwiches. Swirl the sandwiches in the pan to help soak up the added olive oil.
  5. Cook for another 3 to 4 min until the bottom layer of bread has a chance to turn golden brown and the cheese melts completely. Remove the sandwiches from the pan and let rest on a cutting board for about a minute. This allows the cheese to cool just a bit and makes the sandwiches easier to cut and eat. Enjoy!
