Ingredients
  • 1pint heirloom cherry tomatoes, halved
  • 1package mozzarella pearls
  • 1handful Greek basil leaves
  • 2-3Tbsp Pickle Creek infused olive oil
  • 2-3Tbsp Pickle Creek infused balsamic vinegar
  • sea salt & freshly ground black pepper
Instructions
  1. Place cherry tomatoes and mozzarella in a large bowl. Drizzle with olive oil (2-3 Tbsp) and vinegar (2-3 Tbsp).
  2. Toss well and spoon onto a large, shallow platter. Season with salt and pepper, to taste, and sprinkle with the fresh basil. Don’t have mozzarella on hand? Try following the recipe with just sliced tomatoes and basil. Enjoy!
