Strawberry Balsamic Bruschetta
This yummy recipe features the Pickle Creek Strawberry Basil Balsamic Vinegar; however, if you want to explore a sweeter route, you can also use the Chocolate Strawberry Balsamic Vinegar. Or go a little brighter with the Lemon Basil Balsamic Vinegar!

Ingredients
  • 1loaf Italian bread
  • 1pint fresh strawberries, chopped
  • 1/2cup Pickle Creek Strawberry Basil Balsamic Vinegar
  • olive oil for toasting Italian bread slicesTry Pickle Creek Blood Orange Thyme Infused Olive Oil!
  • 1/2cup goat cheese, room temperature (optional)
  • fresh basil for garnish (optional)
Instructions
  1. Heat the strawberry basil balsamic in a skillet or large saucepan over medium-low heat. Simmer gently until reduced by half, 8 to about 10 minutes. Stir in just a pinch of sea salt and remove from the heat. Allow the balsamic reduction to to cool.
  2. Brush both sides of Italian bread slices with olive oil. Brown (make toasty) the slices of bread using a hot grill or a grill pan over medium-high heat.
  3. Spread a thin layer of goat cheese onto each slice of the toasted bread. (Note that you do not have to use the goat cheese, if you prefer not to use cheese. Alternatively, you could substitute thin slices of brie cheese for the goat cheese.)
  4. Stir the chopped strawberries in the the cooled, reduced balsamic vinegar. Spoon equal portions over each of the toasted Italian bread slices.
  5. Garnish with fresh basil leaves, if desired, and serve immediately. Enjoy!
