Pickle Creek Pasta Salad
A Greek-inspired pasta salad featuring Pickle Creek infused olive oils and vinegars.

Ingredients
  • 1/2lb pastacooked al dente
  • 1/2c red onionchopped
  • 1c mix of green and Kalamata oliveshalved
  • 1c cherry tomatoeshalved
  • 1c mix of green and red or yellow bell pepperchopped
  • 1/3c Pickle Creek infused olive oil
  • 1/3c Pickle Creek infused balsamic vinegar
  • 2tsp dried Greek oregano
  • 1c feta cheesecrumbled
Instructions
  1. Place pasta, red onion, olives, tomatoes, and bell pepper in a large bowl.
  2. Whisk together the vinegar, olive oil, and oregano in a small bowl and add to the pasta mix. Toss until everything is well mixed.
  3. Fold in the feta cheese and season to taste with salt and fresh black pepper. Add a little more olive oil or vinegar, if desired. Enjoy!
