Zesty Italian Salad

This is my Mother’s all-time favorite salad dressing! Need I say more? The key ingredient is the Pickle Creek Jalapeno Infused Balsamic Vinegar, which is sweet and just the slightest of spicy. I think you can pair the vinegar with any of the Pickle Creek garlicky olive oils in this recipe, but if you ask my Mother, the Lemon Basil & Garlic Olive Oil is the perfect pairing for this dish!

  • 1/4 c. Pickle Creek Lemon Basil and Garlic Infused Olive Oil Or Greek Basil and Garlic or Roasted Garlic Olive Oil
  • 1/4 c. Pickle Creek Jalapeno Vinegar
  • 1/4 c. Parmesan cheese
  • sea salt & freshly ground black pepper
  • 1-2 heads romaine lettuce chopped
  • 1 pint cherry tomatoes halved
  • 1/2 c. green olives halved
  • 1/2 c. croutons
  • 1/4 c. pepperoncini peppers halved (optional)
  • 1/4 c. red onion slivered (optional)

Instructions
  1. Toss together romaine lettuce, cherry tomatoes, olives, red onion, and pepperoncini. Top with croutons.
  2. Pour olive oil and vinegar in a small bowl and add Parmesan cheese. Mix together thoroughly with a fork and add salt and pepper to taste. Alternatively, place ingredients in a small jar (like a jelly jar), screw the lid on tight, and shake vigorously to mix. Drizzle over salad just before eating. Enjoy!
  3. Creamy variation: To make a creamy version of Zesty Italian dressing, simply add 1/4 c. mayonnaise to dressing and mix well.
