Mini Caprese

This super cute salad features works well with any of the Pickle Creek herb/garlic infused olive oils and savory Pickle Creek balsamic vinegars.

Ingredients
  • 1 pint heirloom cherry tomatoes, halved
  • 1 package mozzarella pearls
  • 1 handful Greek basil leaves
  • 2-3 Tbsp Pickle Creek infused olive oil
  • 2-3 Tbsp Pickle Creek infused balsamic vinegar
  • sea salt & freshly ground black pepper

  • 1 pint heirloom cherry tomatoes, halved
  • 1 package mozzarella pearls
  • 1 handful Greek basil leaves
  • 2-3 Tbsp Pickle Creek infused olive oil
  • 2-3 Tbsp Pickle Creek infused balsamic vinegar
  • sea salt & freshly ground black pepper
Instructions
  1. Place cherry tomatoes and mozzarella in a large bowl. Drizzle with olive oil (2-3 Tbsp) and vinegar (2-3 Tbsp).
  2. Toss well and spoon onto a large, shallow platter. Season with salt and pepper, to taste, and sprinkle with the fresh basil. Don’t have mozzarella on hand? Try following the recipe with just sliced tomatoes and basil. Enjoy!
