Pineapple Fire Fried Rice

This recipes works great with many different Pickle Creek Infused Olive Oils, including Roasted Garlic, Blood Orange Thyme, and Jalapeno. But if you want to really turn up the heat, go for fire! Prairie Fire!

Pineapple Fire Fried Rice

Ingredients
  • 1 Tbsp Pickle Creek Prairie Fire Infused Olive Oil
  • 2 whole eggs for rice, + additional eggs for frying, if desired
  • 1/2 medium onion
  • 1/2 medium bell pepper
  • 1 clove garlic
  • 1 c chopped ham, bacon, or even Spam
  • 2 c leftover cooked white or brown rice
  • 1 c chopped fresh pineapple (or 1 8-oz can diced pineapple)
  • 2-3 Tbsp soy sauce
  • 2-3 Tbsp hoisin sauce
  • Dash ground ginger
  • Salt & black pepper

  • 1 Tbsp Pickle Creek Prairie Fire Infused Olive Oil
  • 2 whole eggs for rice, + additional eggs for frying, if desired
  • 1/2 medium onion
  • 1/2 medium bell pepper
  • 1 clove garlic
  • 1 c chopped ham, bacon, or even Spam
  • 2 c leftover cooked white or brown rice
  • 1 c chopped fresh pineapple (or 1 8-oz can diced pineapple)
  • 2-3 Tbsp soy sauce
  • 2-3 Tbsp hoisin sauce
  • Dash ground ginger
  • Salt & black pepper
Instructions
  1. Add ~1 Tbsp Prairie Fire Olive Oil to a large skillet and heat over medium-high heat. Crack and scramble the 2 eggs. Once the olive oil in the skillet is fairly hot (but not smoking!), add the scramble eggs. Immediately lift and tilt the skillet so that the eggs coat its surface in a thin layer. Put the skillet back on the heat and begin stirring the egg, scraping up small bits as they cook. Fry the eggs 1-2 minutes until completely cooked. Remove the cooked eggs from the skillet, place them in small bowl, and set aside.
  2. Again, add ~1 Tbsp Prairie Fire to the skillet and heat over medium-high heat. When the olive oil is fairly hot (but not smoking!), add the chopped onion and bell pepper. Sauté until the onions are fragrant and the peppers are just tender. Add the garlic and cook for another 1-2 minutes, until the garlic is fragrant. Add the ham, bacon, or spam and cook with the veggies and garlic, stirring constantly, for another couple minutes until the meat is heated through.
  3. Add the rice to the skillet and stir to combine with the veggies and meat. Add another Tbsp of Prairie Fire if the skillet seems dry after stirring in the rice. Cook, stirring frequently, until the rice is just about heated through. Add in the pineapple, hoisin, soy sauce, and ground ginger. Stir to combine and season to taste with salt and pepper.
  4. Cook for 1 to 2 minutes more, until skillet mixture is heated through. Take the skillet off the heat and stir in the eggs. If desired, while rice finishes cooking, add a little Prairie Fire Olive Oil to a second skillet and fry up an egg to over medium—one egg for each diner. Scoop the cooked rice into bowls and top with the fried egg. Enjoy!
